The Flavor Code of Colombian Pink Bourbon: Named Bourbon, but Possibly Hiding Typica and Geisha Genes?
In Colombia's major coffee competitions, a variety named "Pink Bourbon" frequently stands out. It is named for its fruit's delicate pink color, and was originally derived from a cross between Red Bourbon and Yellow Bourbon. However, the pink color is a recessive gene, so it must be isolated from other varieties during cultivation to maintain its color. Yet in recent years, genetic testing has revealed that many competition entries labeled Pink Bourbon do not carry Bourbon chromosomes; instead, genes from Typica, Geisha, or Ethiopian landraces have been detected. Is this a naming mix-up, or a limitation in variety identification? This article will walk you through Pink Bourbon's cultivation history in Colombia, its flavor characteristics, and the scientific controversy surrounding its mysterious origins. [more…]
Analysis of Brazilian AC1 Naturally Decaffeinated Coffee Variety: Origin, Characteristics, and Commercial Prospects
In recent years, naturally low-caffeine coffee has been appearing more and more frequently in cafés and at green bean auctions, with varieties such as Laurina, Aramosa, and the newly discovered Ethiopian AC1 attracting considerable attention. AC1's caffeine content is only about 0.76 mg/g, far lower than that of ordinary Arabica. This variety originated from Ethiopian seed resources and was later discovered and studied by the Brazilian Agronomic Institute (IAC) at Santa Elisa Farm. Although AC1 is chemically similar to mainstream varieties and has strong resistance to coffee leaf rust, its low yield and demanding growing conditions pose challenges to its commercialization. The IAC is now developing new varieties with even lower caffeine content and higher yields through crossbreeding. Front Street Coffee continues to follow the latest developments in this field. A Complete Analysis of Honduran Coffee Regions, Estates, Flavors, Processing Methods, and Varieties: Exploring the Washed and Natural Taste of Front Street Coffee
Honduras, with its exceptional geographical conditions, has become one of the world's top ten coffee exporters. The country has 280,000 hectares of coffee plantations, predominantly smallholder farms, with a large portion of coffee beans coming from micro-farms of less than 3.5 hectares. Front Street Honduras Coffee selects premium cherries and uses the washed processing method: beans are soaked and floated to remove defective ones, then a depulper separates the skin and screens the beans, and finally they are dried in the sun, creating a delicate fruity aroma and balanced flavor. This coffee has medium to light acidity, mild bitterness, and a pronounced sweet aftertaste, often accompanied by floral or fruity notes, with each altitude and region offering its own characteristics. This article will provide a comprehensive introduction to the origins, processing methods, flavor profile, and variety characteristics of Honduran coffee. [more…]

Coffee Consumption and Irritable Bowel Syndrome Risk: Latest Research Reveals a 16% Reduced Association
Coffee is not just a pick-me-up beverage—in recent years, research has also found that it has potential benefits for the digestive system. A 2023 systematic review and meta-analysis published in the journal Nutrients, which included more than 430,000 participants, explored the association between coffee intake and the risk of irritable bowel syndrome (IBS). The results showed that, compared with non-coffee drinkers, people who drank coffee had a 16% lower risk of developing IBS. This protective effect may be related to the antioxidant and anti-inflammatory properties of components in coffee such as caffeine, polyphenols, diterpenes, and trigonelline. However, the effect of coffee on relieving IBS symptoms varies from person to person, and the study itself has observational limitations. This article will provide a detailed interpretation of this study and explore the possible effects of coffee on gut health. [more…]
